Spaghetti Squash Bake

INGREDIENTS

1 lb ground italian sausage
1/2 yellow onion
1 cup spaghetti or pizza sauce
1 tsp dried basil
3 eggs
1/2 cup chopped fresh spinach
1 large spaghetti squash

PREPARATION

Step 1 of 7

Over medium heat sauté the onions for 3 to 4 minutes before adding the Italian sausage to cook until no longer pink

Step 2 of 7

Allow the squash to cool enough to handle and then remove the threads and place in baking dish.

Add the sauce and basil to the sausage with salt and pepper to taste

Cut spaghetti squash and half lengthwise. Play spaghetti, squash, cut side down on the baking sheet and bake for 20 to 25 minutes or until the skin of the squash gives when you press on it. Then reduce the oven heat to 350°F.

Mix the sausage into the squash in the baking dish along with whisked eggs mixing until thoroughly incorporated

Preheat oven to 400°F and grease and 8x8 baking dish

Bake 1 hour or until a slight crust forms on top and it doesn’t give when pressed. Rest for 10 minutes and serve.
